Pickled onions

Tangy, crisp, sweet and sour, these pickled onions will elevate any meal. Add them to salads, burgers, a toastie, BBQ meat, on rice or leftovers. They also make a great gift!

Ingredients

2 small or 1 large red onion

1/2 cup apple cider vinegar

1/2 cup water

1 tbl honey/sugar

1 tsp salt

Method

Thinly slice the onions and pack them into a glass jar (my jar is roughly 375 ml, but you could use any size and scale the recipe accordingly).

Heat the vinegar, water, honey/sugar and salt in a saucepan over medium heat.

Stir until the honey/sugar and salt dissolve. Allow to cool slightly, then pour over the onions. If your onions aren't fully covered, add some additional vinegar.

Leave at room temperature for an hour, then store the pickled onions in the fridge.

They will last for a month.
